High fibre protein pancakes

Ingredients:

1 cup wholemeal SR flour

1 scoop vanilla protein powder ( I use a Casein based one for best results but Whey protein should also work)

2 eggs

1 cup low-fat/skim milk (Almond or Oat milk are also suitable)

1tsp vanilla extract

1/2-1cup water


Method:

  1. Combine protein powder and flour in a bowl

  2. Whisk eggs, vanilla, and milk and add to the dry mixture

  3. Combine (this mixture will be quite dry).

  4. Continue to add water until desired consistency is reached.

The mixture should make 6-7 decent-sized pancakes.

Serve with fruit, yogurt or sugar free maple syrup

Sounds yummy, but does anyone have a calorie and protein count for these? As a diabetic I need to know.
